Bruker nok ikke jordbær, men bringebær eller blåbær tenker jeg.
Strawberry and White Chocolate Cheesecake
Ingredients:
• 200g Safari Cookies
• 70 g butter
• 150 ml Double cream
• 250g White chocolate
• 3 Gelatine leaves/sheets
• 300g Cream cheese full fat
• 250g Mascarpone cheese
• 350g Strawberries
Method:
Note: You will need a 20cm (8in) Non-stick springform cake tin.
Bash the bisquits in a resealable bag with a roling pin, or any other blunt instrument you can do serious damage with, until you have fine crumbs.
Melt the butter in a large saucepan then add the biscuit crumbs and mix to combine. Tip the butter and biscuit mix into the base of the springform tin and press down with the back of a spoon. Cover and place in the fridge to chill while you prepare the rest of the ingredients.
Place the cream and chocolate in a small pan and heat gently until the chocolate is melted. Stir occasionally.
Place the gelatin in a bowl of cold water and leave for 5 minutes. Remove the gelatin from the water and shake off the water. Add it to the cream/chocolate mixture and stir until dissolved.
Cut 200g of the strawberries into small pieces.
Whisk the cream cheese and mascarpone in a large bowl until smooth. Then whisk in the chocolate mixture until smooth. Fold in the strawberries. Spread the mixture evenly over the top of the biscuit base, then cover and place in the fridge to chill and set for at least 2-3 hours.
Remove the cheesecake from the tin, decorate with the remaining strawberries and serve in generous slices.
